Sublimarea este o metodă specială de îndepărtare a lichidului din produse în vid. În primul rând, o congelare rapidă a produselor este realizată la o temperatură de -200 C. Se știe că în timpul înghețării, lichidul este transformat în cristale de gheață care depășesc volumul lichidului în sine. Cu toate acestea, cu înghețarea rapidă, cristalele sunt atât de mici încât nu distrug membranele celulare. Apoi, într-o cameră închisă ermetic, din care este eliminat aerul, produsele sunt încălzite.
